Dolma describes leaf-wrapped and stuffed-vegetable preparations rather than one recipe. Grape leaves, onions or aubergines may enclose rice, herbs and varied fillings, with meat and meatless forms. Acidity, fat and cooking liquid affect texture; a vegetable name does not establish vegetarian ingredients.
